Ingredients
- 2 cups of pasta penne, spaghetti, or your choice
- 2 chicken breasts diced
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 cup heavy cream or milk for a lighter option
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
Optional: Spinach, cherry tomatoes, or mushrooms for added veggies
Instructions
- Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water and drain.
- Heat olive oil in a large pan over medium heat. Add the chicken, season with salt and pepper, and cook until golden brown and cooked through (about 5–7 minutes). Remove the chicken and set aside.
- In the same pan, add garlic and sauté until fragrant (1–2 minutes). Stir in the heavy cream, Parmesan, Italian seasoning, and a splash of pasta water. Simmer for 3–4 minutes until slightly thickened.
- Add the cooked chicken and pasta to the sauce, tossing to combine. Adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with extra Parmesan and fresh parsley if desired.
