TikTok Green Goddess Salad

Ingredients
  

For the Salad:

  • 1 small head of green cabbage finely chopped
  • 1 cucumber diced
  • 1 bunch of chives chopped

For the Dressing:

  • 1 cup fresh basil leaves
  • 1 cup fresh spinach leaves
  • 2 cloves garlic
  • 1 small shallot
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 1/4 cup nutritional yeast or Parmesan cheese
  • 1/2 teaspoon salt adjust to taste
  • 1/4 cup walnuts or cashews optional for extra creaminess
  • 2 –4 tablespoons water to thin the dressing, if needed

Instructions
 

Prepare the Salad:

  • Finely chop the cabbage and cucumber, then toss them with the chopped chives in a large bowl.

Make the Dressing:

  • In a blender or food processor, combine all dressing ingredients (basil, spinach, garlic, shallot, lemon juice, olive oil, rice vinegar, nutritional yeast, salt, and nuts, if using). Blend until smooth.
  • Add water, one tablespoon at a time, until the dressing reaches your desired consistency.

Combine and Serve:

  • Pour the dressing over the chopped vegetables and mix until everything is evenly coated.
  • Serve immediately with tortilla chips, crackers, or as a side dish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days.
Customize by adding avocado, toasted seeds, or grilled chicken for a heartier version.
