Ingredients
  

  • 2 cups basmati rice
  • 1 cup barberries zereshk
  • 2 tbsp butter
  • 1/4 tsp saffron bloomed in hot water
  • 2 tbsp sugar optional
  • 1/4 cup slivered almonds for garnish
  • Salt water, and oil as needed

Instructions
 

  • Rinse rice under cold water until clear.
  • Boil water, add rice, cook for 6-7 minutes, then drain.
  • Melt butter in a pan, add barberries, saffron, and sugar. Stir for 2 minutes.
  • Layer parboiled rice in a non-stick pot with butter at the bottom.
  • Cover and steam on low heat for 40-50 minutes.
  • Mix saffron water with some rice for a golden topping.
  • Serve topped with barberries and almonds. Enjoy!
