Classic Spaghetti Carbonara Recipe 🇮🇹🍝

Ingredients

225g spaghetti
2
large eggs
½
cup
50g grated Parmesan cheese (or Pecorino Romano)
4

115g pancetta or bacon, diced
2
cloves
garlic
minced (optional, but adds great flavor)
1
tbsp
olive oil
Salt & freshly ground black pepper to taste
Fresh parsley
chopped for garnish (optional)
Instructions
Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the spaghetti until al dente (firm to the bite). Reserve ½ cup of pasta water, then drain.
Prepare the Sauce:
In a bowl, whisk together eggs, cheese, and black pepper until smooth.
Cook the Pancetta (or Bacon):
Heat olive oil in a pan over medium heat.
Add pancetta and cook until crispy.
(Optional: Add garlic and sauté for 30 seconds, then remove.)
Combine Everything:
Reduce the heat and add the hot drained spaghetti to the pan. Toss to coat with the pancetta fat.
Remove the pan from heat and quickly mix in the egg and cheese mixture, tossing continuously to create a creamy sauce.
Add a little pasta water (1-2 tbsp at a time) until the sauce reaches a smooth consistency.
Serve Immediately:
Top with extra Parmesan, black pepper, and fresh parsley.
