Creamy Garlic Chicken

Ingredients
  

  • Chicken breasts 4 boneless, skinless
  • Olive oil 2 tbsp
  • Butter 2 tbsp
  • Garlic cloves 5-6, minced
  • Heavy cream 1 cup
  • Chicken broth 1/2 cup
  • Parmesan cheese 1/2 cup, grated
  • Dried thyme 1 tsp
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Prepare the Chicken:

  • Season both sides of the chicken breasts with salt, pepper, and thyme.

Cook the Chicken:

  • Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F / 75°C).
  • Once done, remove the chicken from the skillet and set it aside.

Make the Creamy Garlic Sauce:

  • In the same skillet, add butter. Once melted, sauté the minced garlic for about 1 minute until fragrant.
  • Pour in the chicken broth and bring to a simmer, scraping up any bits from the bottom of the pan.
  • Stir in the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes until it thickens slightly.

Finish the Sauce:

  • Stir in the grated Parmesan cheese and let it melt into the sauce. Taste and adjust the seasoning with more salt and pepper if needed.

Combine and Serve:

  • Return the chicken breasts to the skillet and spoon some sauce over the top. Let everything cook together for another 2-3 minutes to ensure the chicken is fully coated and heated through.
  • Garnish with freshly chopped parsley before serving.
