Season both sides of the chicken breasts with salt, pepper, and thyme.
Cook the Chicken:
Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F / 75°C).
Once done, remove the chicken from the skillet and set it aside.
Make the Creamy Garlic Sauce:
In the same skillet, add butter. Once melted, sauté the minced garlic for about 1 minute until fragrant.
Pour in the chicken broth and bring to a simmer, scraping up any bits from the bottom of the pan.
Stir in the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes until it thickens slightly.
Finish the Sauce:
Stir in the grated Parmesan cheese and let it melt into the sauce. Taste and adjust the seasoning with more salt and pepper if needed.
Combine and Serve:
Return the chicken breasts to the skillet and spoon some sauce over the top. Let everything cook together for another 2-3 minutes to ensure the chicken is fully coated and heated through.
Garnish with freshly chopped parsley before serving.
Serving Suggestions:
Serve the creamy garlic chicken over pasta, mashed potatoes, or with a side of steamed vegetables for a complete meal. Enjoy!
