East Side Veggie & Bean Chili

Why It's Great: Healthy, protein-packed, and perfect for meatless Mondays.

Ingredients
  

  • 1 can black beans
  • 1 can kidney beans
  • 1 can corn
  • 1 onion diced
  • 1 bell pepper chopped
  • 2 cups vegetable broth
  • 1 tbsp chili powder

Instructions
 

  • Sauté onion and pepper in a large pot.
  • Add remaining ingredients.
  • Simmer for 30 mins. Serve with cornbread.
