East Side Veggie & Bean Chili
Why It's Great: Healthy, protein-packed, and perfect for meatless Mondays.
- 1 can black beans
- 1 can kidney beans
- 1 can corn
- 1 onion diced
- 1 bell pepper chopped
- 2 cups vegetable broth
- 1 tbsp chili powder
Sauté onion and pepper in a large pot.
Add remaining ingredients.
Simmer for 30 mins. Serve with cornbread.
