Ingredients
  

For the Marinade:

  • 2 cups buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper adjust for spice level
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 pounds chicken pieces drumsticks, thighs, or wings

For the Coating:

  • 2 cups all-purpose flour
  • 1/2 cup cornstarch for extra crispiness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For Frying:

  • Vegetable oil or peanut oil

Instructions
 

  • Marinate the Chicken:
  • In a large bowl, whisk together the buttermilk and all the marinade spices.
  • Add the chicken pieces and ensure they are fully coated. Cover and refrigerate for at least 4 hours, preferably overnight.
  • Prepare the Coating:
  • In a shallow dish, mix the flour, cornstarch, and all the spices for the coating.
  • Remove the chicken from the marinade, letting the excess drip off. Dredge each piece in the flour mixture, pressing lightly to coat well. Let the coated chicken rest for 10-15 minutes to allow the coating to stick.

Heat the Oil:

  • Heat about 2 inches of oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).

Fry the Chicken:

  • Fry the chicken in batches, being careful not to overcrowd the pot. Cook for about 10-12 minutes for smaller pieces or 14-16 minutes for larger pieces, turning occasionally, until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (74°C).

Drain and Serve:

  • Remove the chicken and let it drain on a wire rack or paper towels. Serve hot with your favorite dipping sauces.
