Mexican Burrito Recipe

Ingredients
  

  • 1 lb ground beef or chicken or beans for a vegetarian version
  • 1 small onion finely chopped
  • 1 packet taco seasoning or homemade seasoning mix: chili powder, cumin, garlic powder, and paprika
  • 2 cups cooked rice optional, but great for filling
  • 1 cup shredded cheese cheddar or Mexican blend
  • 8 large flour tortillas
  • 1/2 cup sour cream optional
  • Salsa or pico de gallo
  • 1/2 cup chopped lettuce
  • 1/4 cup cilantro chopped
  • Lime wedges optional

Instructions
 

  • Cook the Meat:
  • In a large skillet, cook the ground beef or chicken over medium heat, breaking it apart as it cooks. Once browned, drain excess fat if necessary. Add the taco seasoning (or your homemade mix) and a bit of water (about 1/4 cup), and cook until thickened.
  • Prepare the Rice:
  • Cook rice according to the package instructions or use leftover rice to make it quicker.
  • Warm the Tortillas:
  • Heat the tortillas in a dry skillet or microwave for 20-30 seconds to soften.
  • Assemble the Burritos:
  • On each tortilla, place a few spoonfuls of the cooked meat, followed by a scoop of rice, shredded cheese, sour cream, salsa, and fresh toppings like lettuce and cilantro.
  • Roll and Serve:
  • Carefully fold the sides of the tortilla inwards and roll it tightly from the bottom up. Serve with lime wedges on the side for an extra zing.

Notes

Budget-Friendly Options: Use beans (pinto or black beans) in place of meat to make a vegetarian version and save money.
Customization: Feel free to add any additional toppings like guacamole, jalapeƱos, or hot sauce to suit your taste.
